The Trentodoc Spumante which combines the elegance of Chardonnay with the structure of Pinot Noir. We ferment Chardonnay grapes strictly as white wine, the Pinot Noir grapes have a first fermentation on the grapes for washing-out some color, followed by pressing. With that we obtain the characteristic pink shade of our Valentini Rosé. In Spring after harvesting we prepare the blend and fill this wine in bottles, where it remains for at least 24 month for the second fermentation. Hereafter we proceed with the last step of champagne method by adding a small quantity of “liquer d’expedition”.


VINEYARDS: selected vineyards with small yields, Pinot Noir and Chardonnay grapes from both sides of Vallagarina valley, altitude between 450 and 600 m, with orientation south/west and south/east
TRAINING METHOD: guyot and traditional Trentino-Pergola (trellised vine)
VINES PER HECTARE: 4.000 to 4.500 vines per hectare

WINE DESCRIPTION

COLOR: soft rose with copper reflexes, long-lasting and delicate perlage
FLAVOR: rich fruit bouquet, mainly small berries, redcurrant and apple notes
TASTE: rich, nicely balanced and with a long-lasting final note
PAIRING: best with fish courses, baked or salt encrusted dishes
SERVING TEMPERATURE: 4-6°C (39,4-42,8°F)
